What to do with Christmas leftovers – from turkey curry to bubble and squeak
This year, many of us have more leftovers than we usually have at Christmas.
The coronavirus pandemic has prevented larger gatherings, which has left us with extra turkey and gammon going spare.
Thankfully, there are plenty of ways to turn these off-cuts into delicious new dishes.
You can even re-use festive veggies like potatoes, carrots and parsnips if you have them leftover.
From bubble and squeak to spicy curries, they’ll help to keep you going throughout Boxing Day and beyond.

Bubble and squeak
The joy of bubble and squeak is you can use whatever you have lying around in your home.
For his simple recipe, Jamie Oliver uses 500g of leftover vegetables and 750g of potatoes.
The trick is to chop these ingredients into bitesize chunks and sweat them off in a man with butter.
Mash everything together and flatten into a pancake shape.
Cook until golden and then serve with whatever leftover meat you have lying around in the house.
This dish looks impressive but it’s surprisingly easy to do.
Slowly fry off onion, garlic and ginger in a pan until it’s golden but not burnt.
For a cheat’s curry, add paste or pre-made powder.
Or if you want to customise the flavours, experiment with turmeric, chilli powder, cinnamon, cumin and other spices to make a unique blend.
After frying off the spices for a minute or two, add a tin of tomatoes and simmer.
When your sauce has reduced down and thickened, chuck in leftover turkey and warm through.
Serve with rice, coriander and other accompaniments of your choice.
You can’t really go wrong here.
Get some buttered slices of bread and throw in whichever meats you have leftover from the big day.
Alternatively, grab some cheese you didn’t manage to scoff.
Add lashings of sauce – whether this be cranberry, onion chutney or bread.
And if you’re feeling cheeky, you can even dip your sarnies in a pot of gravy.
