  • Britons ate an extra 4.4million packs of sausages in the past 12 months
  • The country spent around £27million on sausages, up 4 per cent since 2015
  • Industry bosses say the revival is down to increased range of options  

Once demonised for its questionable ingredients and high levels of fat, the sausage is sizzling again.

Britons ate an extra 4.4million packs over the past year, with spending up more than £27million, industry figures show.

The revival has been driven by new healthy options and artisan versions with gourmet ingredients. While the traditional pork, fat and rusk sausage remains popular, alternatives made with venison and even pheasant are doing well.

Low fat and extra lean sausages, including versions made with chicken and turkey, are also helping turn around sales. 

Dawn Spencer of Kerry Foods, whose Richmond Chicken Sausages went on sale in supermarkets this year, told The Grocer magazine: ‘Families are increasingly interested in leaner, healthier proteins, so it’s no surprise that the chicken sausages market is becoming a highly lucrative one.’

Figures from analyst Kantar World Panel show sausage sales have risen for the first time since 2015, up 4 per cent to £672million in the past year.
